Sometimes or some meals? Cornbread is the perfect side! It is our go-to dish for potlucks and parties, even some of our friends request this as a special baked treat! So why not share this recipe too?
In fact, we went to a potluck party for my husbands work last night and we baked a double recipe for a 9 X 13 pan to take over. We had a great time, got to sit around a table, chat with friends, chase after each other’s kids and our husbands shielded the women and children from the rain, wind and flying plates, jackets and anything else that would become airborne! There was an incident with mustard, a few whipped cream pies in the face and Mei. She screamed and cried from the noise of a few dozen adults whooping and hollering. She just couldn’t take the excitement and then wasnt interested in being held by even me but even less by most anyone else. So she didn’t enjoy her first party, but… there was some delicious cornbread (and plenty of other good food) to stuff our faces with! – other than the select few people who received pies in their faces!
- 1 -1/4 C all-purpose flour
- 3/4 C cornmeal, yellow or white
- 1/2 C granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 C milk
- 1/4 C vegetable oil
- 2 egg whites or one egg, beaten
Heat the oven to 400F or 200C. Grease the pan you wish to bake your cornbread in. You will have to nearly double the time for a glass pan, an aluminum pan works the best or dark metal pan.
Combine all the dry ingredients and whisk to combine. Stir in the milk, oil and egg, mixing just until dry ingredients are moistened. Then pour the batter into your prepared pan and bake for 20-25 mins or until lightly golden brown and a toothpick inserted in the highest rising parts comes out clean.
